This gorgeous pils is the delicious progeny of our collaboration with the crew at Fair State Brewing Cooperative. Brewed with copious amounts of Huell Melon hops, aromas of fruity, melony awesomeness explode out of the glass and carry through to the flavor, tempered by a beautifully crisp, clean mouthfeel and finish. It’s a righteous testament to the combined efforts of kindred spirits.

Pilsner

The flavor: cold. The crushability: maximum. Ice is our very first pils, and it brings the noise. Hopped with Czech Saaz and Australian Summer hops, before, like, so many weeks of lagering, Ice packs the flavor of the mighty San Diego mountains into a compact 4.8% ABV package.

Sour Brett IPA w/ Grapefruit Zest

We kettle-soured this divine nectar with three lacto strains before fermenting with our house Brett blend, yielding a funky little number with loads of tropical, citrusy flavor. Then we sealed the deal with grapefruit zest for a mouth-full of fresh-squeezed, citrusy radness.

Universal Friend is a Saison made with grape must. The first variation features Pinot Grigio. Future varieties may include Chardonnay and Pinot Noir. 

Universal Friend is brewed with our house Saison yeast, and has an elevated fruit and wine note from the grape must. Universal Friend is light, crisp, and refreshing. The nose is clove, grape, citrus, and a little sweetness that all carry into the flavor. 

Protocosmos

Protocosmos combines the crazy, fruity awesomeness of Australian Galaxy hops with the bright, citrusy qualities of American Ahtanum & Centennial hops. The dry, cracker-like malt body is super-saturated with hop flavor & aroma, allowing you to revel in the diggity dankness of these absurdly expensive hops without any sweetness to harsh your mellow.

Protocosmos is named after an insane underground world described by Casanova (yup, that one) featuring multi-colored humanoids, strangely small flying horses, and fruit-eating serpents.

Coffee Brown

Sleepless City is a brown ale loaded with our house roasted single origin Kenya Nyeri Othaya Peaberry coffee.The base brown ale is super tasty in its own right, with prominent notes of toast, chocolate, and fresh bread. As with everything we do, we aimed for a harmonious union of these two complex flavors—rather than a sledgehammer of just one flavor—and we feel like we achieved it. City of the Dead

Export Stout with BBL Aged Coffee

City of the Dead is a big, full-bodied stout with lots of chocolate undernotes dominated by the bourbon barrel aged coffee. The beer is dosed at 1 pound per barrel, and has a distinctly rich, bourbon coffee aroma and flavor. As the beer warms, the bright bourbon aroma settles in and the coffee base really shines. This is the first commercially bottled barrel aged coffee beer in the world (that we know of!)

Monsters’ Park

Monsters’ Park is a hulking, cantankerous imperial stout sporting a brawny malt bill and a dry, lingering finish. Its massive roast profile blends with an eye-popping coffee, chocolate, and toast character, which combine to provide a monumentally robust & aggressive experience. Monsters’ Park has an incredible chocolate and roast nose that is surprisingly balanced for the higher alcohol content. The flavor is complex, with chocolate, roast, dark fruit, coffee, and more that linger as you sip.

Neverwhere

Phalanx IPA a peachy, juicy, robust 7.5% ABV IPA loaded up with (insanely expensive) Australian Summer hops. We balance the peach/apricot flavor & aroma from the Summer hops with small quantities of Horizon (for dankness) and Chinook (for citrus).

Orderville

Orderville is an aggressive, fragrant IPA that blends the fruit-forward character of Mosaic hops with the dank, resinous stickiness of Simcoe hops. The resulting beer is immensely rad, with an unmistakably bangin' aroma and a fully saturated hop flavor and finish. The cracker-dry body keeps the focus squarely on the massive, incredibly delicious hop character, inviting your taste buds to join a drum circle of flavor in a magical forest of hops.

New Harmony

Belgian Strong Golden

New Harmony is a Belgian Strong Pale brewed with Trappist yeast and stuffed full of Huell Melon hops from Germany. Huell Melon is another new, fancy hop on the market that comes alive with flavors and aromas of ripe cantaloupe and hints of tropical fruit. Combined with the gummy, peppery notes of the yeast, this beer boggles the mind with flavor explosions.

Mega Black House

Fortunate Islands with Grapefruit

The hoppy, tropical aroma & flavor of Fortunate Islands is the perfect canvas for grapefruit zest, which we make by hand-peeling a zillion goddamn grapefruits and adding only the oily skin to the beer.  It's insanely labor intensive, but the poppin', fresh grapefruit character can't be beat.
